Hi everyone!! I hope you all are well. I have a new and easy recipe for you today! I developed this recipe while suffering from cabin fever during the shutdown (which is now over – woohoo!!!). I have a minor (okay, major) sweet tooth and it calls out to me when I work from home. I can silence my sweet tooth when I only work from home once a week. However, it started to become a problem when I was working at home on Monday, Wednesday, and Friday! To curb this I created an awesome new side dish, which I had for lunch on Monday.

I have been feeling a little under-the-weather this week and I wasn’t planning to post today. However, after a green-pick-me-up smoothie I am feeling slightly better and I decided to share my secret weapon! I’m not sure if it is just the constant rain that has me down or if it is related to the flu shot I had earlier this week, but I’m hoping that this smoothie keeps me going through the rest of the afternoon!
Hi everyone! Happy Friday! I don’t know about you all, but this week has seemed to last forever! Luckily, I was able to whip out a new and easy dinner recipe midweek to spice things up. It’s super easy and really flavorful. The calorie count is pretty awesome too!
I don’t know about you all, but every once in awhile I get super tired of the same old chicken breasts. I sometimes use dry onion soup mix on potatoes and pot roast and I thought why not add it to bland old chicken? The result? Awesome!!!

So I know “The Best Black Beans Ever” is quite a cocky title, but seriously – this recipe makes THE BEST BLACK BEANS EVER!!! I have always loved black beans, in fact when I was younger I got made fun of for ordering black bean soup as an entrée at a Mexican restaurant. What can I say? They’re awesome!
I originally saw this recipe in my new favorite cookbook, It’s All Good, but I made a few changes. Mostly, I just reduced the amount of oil to bring down the overall fat content! Believe me, you don’t need a ton of fat to make these beans awesome – the trick is to cook them over low heat for at least fifteen minutes to get a deeper flavor.
Congratulations on surviving your first week to everyone who headed back to school and work this week! Getting back into the swing of things and adjusting to new schedules can be hard, but I have faith that we’ll all adapt! This week was super busy for me, mostly trying to figure out how to balance working full days on Monday and Wednesday with school work. I had planned on making something more elaborate for you guys, but instead I’m sharing what I like to call a “nothing in the fridge” easy weeknight meal.
