Nachos

Hi everyone, Happy Valentine’s Day!!! I hope you all survived the snow storm! Chris and I both had the day off yesterday and decided to have a semi-indulgent dinner last night in the form of nachos!!

We had some leftover chicken, corn tortillas, and cheese so I decided to throw them together in a casserole and see what happened. Lucky for me, my little experiment was delicious!!

20140214-084045.jpgThis isn’t really a recipe – more of a method. Feel free to swap in black beans, a different type of meat, or a different kind of cheese!

For my nachos I used homemade corn tortilla chips, fat-free refried beans, leftover chicken breast (1 and 1/2 breasts), sharp cheddar cheese, and salsa (hot green salsa and medium red salsa).

If you want to make your own chips, cut 6-inch corn tortillas into triangles (4 chips per tortilla). I think I used at least 15 little tortillas if not more. If you make too many just keep them in a large ziplock bag!

Spray a cookie sheet with nonstick spray and then place tortilla triangles in a single layer. Spray the tortillas with more nonstick spray (I used butter flavor) and top with kosher salt and chili powder. Bake at 350 degrees for about 15 minutes. Keep an eye on them because they brown really easily!

20140214-083906.jpgTo make the nachos, place a layer of chips in the bottom of a deep casserole – preferably one you can serve them in.

20140214-084104.jpgand a layer of cheddar cheese!

20140214-084118.jpgPlace the casserole in a 350 degree oven and cook for 10-20 minutes. You might need to go longer to make sure the cheese on the second layer melts!

This was a really delicious and easy snowday dinner! It wasn’t too terrible either because we baked our own chips!

Butternut Squash and Black Bean Tacos

Hi everyone!! I hope you had a nice week! I’m in the end of semester push right now (a.k.a. high anxiety and high stress only made worse by being around other law students!!). I’m hoping to continue posting through the end of the semester and exam period, but no promises. If things go radio silent, you’ll know why and hopefully I’ll be back around Christmas!

White Chicken Chili

Onion Baked Chicken

Hi everyone! Happy Friday! I don’t know about you all, but this week has seemed to last forever! Luckily, I was able to whip out a new and easy dinner recipe midweek to spice things up.  It’s super easy and really flavorful. The calorie count is pretty awesome too!

I don’t know about you all, but every once in awhile I get super tired of the same old chicken breasts. I sometimes use dry onion soup mix on potatoes and pot roast and I thought why not add it to bland old chicken? The result? Awesome!!!

Squash Frittata

Congratulations on surviving your first week to everyone who headed back to school and work this week! Getting back into the swing of things and adjusting to new schedules can be hard, but I have faith that we’ll all adapt! This week was super busy for me, mostly trying to figure out how to balance working full days on Monday and Wednesday with school work. I had planned on making something more elaborate for you guys, but instead I’m sharing what I like to call a “nothing in the fridge” easy weeknight meal.
