Hi guys! I have a new recipe for you today! This past year I found myself sticking to some of my old favorites like broiled pork chops, blackened tilapia, roasted veggies, turkey burgers, and crock pot pulled chicken and pork. I did find some new favorites though and this recipe is one of them!

Happy Monday everyone! I hope you all enjoyed your first “official” weekend of summer! It was hot and steamy in DC, but I still managed to spend some time in the sun, and eat some great grub! Friday night, I threw together a quinoa salad with garbanzo beans and leftover roasted veggies from earlier in the week. Dressed with a little olive oil and red wine vinegar, this was a light and quick dinner that I enjoyed before Chris and I met a few of his friends out in DC!
Chris and I eat chicken sausage pretty frequently, sometimes for breakfast, and sometimes as an easy dinner on hot dog rolls topped with mustard. Regardless of what time of day we’re having sausage, it is always paired with onions and peppers. Therefore, creating this Lightened Up Hot Italian Sausage and Pepper recipe was a no-brainer! This is an easy weeknight dinner, ready in an hour or less. It definitely packs a punch with the spicy sausage and crushed red pepper flakes, but the onion and green pepper balance out the heat, don’t worry!
I love artichokes, their tang and texture, their versatility, — oh yeah, I almost forgot to mention, the way they can make a regular old piece of chicken sing. I decided to make this one night when I was feeling particularly uninspired and just needed something warm and comforting for dinner, without breaking the calorie bank. Lucky for me, this turned out to be yummy enough to share!

Roasted Asparagus. Roasted Broccoli. Pasta Pearls. Feta Cheese. Please tell me what’s not to like?! I came up with this Roasted Asparagus and Broccoli Israeli Couscous Salad in March when temperatures were in the upper 70’s. I was itching for summertime, and super light but satisfying meals. I could eat this on its own as a meal, but I served it with quick and easy Grilled Lemon Chicken Breasts, to keep the male contributor to this blog happy.
I have a tendency to walk into the kitchen with an idea for a meal, look in my refrigerator and pantry and then just go with the flow. That’s exactly what happened with this Lightened Up Chicken Parmesan recipe. I originally thought I’d just grill the chicken, but then I saw that I had some bread which was nearing the end of its life, so I decided to try my hand at homemade Italian bread crumbs. I was also planning on serving this with a very small portion of pasta, only one cup for two servings, but my lovely (hungry) boyfriend quickly informed me that was definitely not enough pasta. So instead of a side salad we tripled the amount of pasta. Healthy.The best part about this meal is that you can prepare the chicken and sauce all in the same skillet, making for an easier clean-up. This is a very simple week night meal and is ready in 30-45 minutes!
