The name says it all, Instant Seduction Pork Chops y’all! Just kidding, these are some fantastic chops though! I came across this recipe in my “100 Recipes Every Woman Should Know” cookbook which is full of recipes with fun names like this one. Chris and I are big fans of pork, it’s easy to prepare and not terribly expensive, so I thought this would be a great dinner to make before he took the bar two weekends ago. He was asking me to make them again before we had even finished the dishes! A winner in my book which will be made again!

A few weeks ago I was in a food rut and needed something to pull me out of my funk. Enter this mussel recipe! I had never attempted to make mussels at home, but knew they were relatively cheap and easy so I thought I would give it a shot! I was tempted to do a classic butter and white wine sauce, but I saw this recipe on Cooking Light and thought it sounded great, and it isn’t as bad for the waist line! Chris and I were not let down!
Chicken fajitas are delicious and easy to make. I love making fajitas for dinner because they’re filling and chock full of veggies. However, I’m usually content to just dice up the chicken and cook it in the skillet right along with the vegetables and a packet of taco seasoning. There is nothing wrong with that method, but these chicken fajitas kick my taco packet fajitas in the behind.
I decided to make Chicken Piccata for dinner the other night because I had a few lemons near the end of their lives in my crisper drawer. I was originally going to make it sans breading, but a short text conversation with Chris confirmed that breadcrumbs would be involved. I managed to keep things on the lighter side though by using a minimal amount of butter, no wine, and just a little olive oil spray. We were very satisfied with the results!
Happy Fourth of July!!!! What is everyone up to today?! Today, I want to share a super simple, but super delicious recipe. This recipe is for anyone who needs a last minute dish for tonight. In fact it is so simple, I made it twice in one weekend! Pimento Cheese is seriously addictive, which is why I wanted to make a lighter version of this typically mayo and cream cheese laden dip. Here’s how I accomplished that goal!
Sometimes I make Chris eat meatless meals, and he will usually do so without too many complaints. Last week after he ate tofu with a smile (recipe coming soon!), I decided to make something I knew he would really enjoy. Frank’s Red Hot Sauce was my ingredient of choice, because he puts it on everything. Seriously, its like the commercial, he puts that “ish” on everything! I decided to take my favorite buffalo chicken dip, and turn it into a pizza! This pizza was not only super delicious, but really filling!! Definitely a keeper that will be made over and over again!
I considered naming this dip, Heaven on Earth, because seriously, that’s what it is. You know when you see a recipe, and say to yourself, “Oh my goodness, I NEED to make that TONIGHT,” but then you never actually do? No?? Well, maybe it’s just me. Anyway, I see recipes all the time, and usually really want to make them, but just simply email them to myself, or pin them to make later. HOWEVER. I saw this recipe last Wednesday, while I was reading on my lunch break and NEEDED to have it, like right then. It was calling out to me! So, I did what any crazed, sweet tooth driven person would do, hit up the grocery store on my way home from work, and whipped this up before I could even change out of my work clothes. And, I am not sorry about it! Not one bit. This was wonderful, and it’s made with nonfat yogurt and fat-free cool whip, so it’s practically health food right? Anyone still with me?
