Hi everyone! I hope you all are are having a nice week! This week didn’t drag on the way last week did, but I am still glad that it is Friday!
Today I want to share my favorite smoothie recipe with you. I love my Green Smoothie, but I like the flavor of the peaches and blueberries a little more than banana. This smoothie is a cinch to pull together and it keeps me satisfied until lunchtime!
To make my purple smoothie you need: 1/2 cup frozen peaches, 1/2 cup blueberries, 3/4 cup nonfat greek yogurt, 1 big handful of spinach, 1/2 cup skim milk, 1/2 cup water, 1/2 Tbsp. peanut butter, and 1 Tbsp chia seeds (optional).
The technique is pretty easy – throw all the ingredients except for the chia seeds into a blender and run on high until smooth!
I usually cut my peaches into smaller pieces because my blender has a hard time with them. If you have a super fancy blender I’m sure you can just throw them in, but I recommend cutting them up if not.
After blending, add in 1 Tbsp. of chia seeds. This is completely optional, but I love the texture that they add! The added fiber and protein is pretty great too – 3.3 grams and 1.3 grams respectively!
Stir the chia seeds in and enjoy!!
This is my favorite combination of ingredients for this smoothie, but feel free to make your own tweaks! I used to use 1 cup of milk instead of adding water, but I reduced it to cut calories. If you want a creamier smoothie, add the full cup and skip the water. You can also skip the spinach and will get a brighter purple color, but who wants to miss out on a full serving of vegetables first thing in the morning?? I promise you can’t taste the spinach at all!

My Favorite Purple Smoothie
Serves 1
1/2 cup frozen peaches (chopped)
1/2 cup frozen blueberries
3/4 cup nonfat greek yogurt
1 large handful spinach
1/2 cup skim milk
1/2 cup water
1/2 Tbsp. peanut butter
1 Tbsp. chia seeds (optional)
Put all ingredients except for chia seeds in a blender. Blend on high until smooth. Pour into a glass.
Stir in chia seeds if desired.
Drink and enjoy!!
