Hi everyone! I hope you had a nice weekend! I had to work for most of the weekend on papers and end of the semester assignments. I’m looking forward to relaxing a little bit this coming weekend!
After a long Friday of dealing with the cable company (internet issues) and work, Chris and I decided to grab some dinner outside of the apartment building.
I was determined to have a super productive Saturday. I woke up early, went for a run, and came back and made my favorite purple smoothie. This mason jar was full of blueberries, peaches, greek yogurt, unsweetened vanilla almond milk, and natural peanut butter. So delicious!!
After a pretty productive morning, I enjoyed a bowl of chicken and vegetable soup that my mom made. I pulled it out of the freezer and enjoyed it so much that I actually had some more soup for dinner. Thanks, Mom!!!
Around 8:30, I decided I couldn’t look at the paper I was working on anymore, so I decided to decorate my Christmas tree! When we were growing up, my brother and I both had our own Christmas tree and we got new ornaments every year to add to our collection. I had a thing for Barbies if you can’t tell. 🙂 Chris said we have the girliest tree ever!
Sunday was another productive day. In the afternoon I decided that I wanted to clean out our pantry in lieu of hitting up the grocery store with such a short week ahead.
I made a quinoa salad with bell pepper, garbanzo beans, and corn. I added some apple cider vinegar and Old Bay to season it. This was actually delicious and reminded me of summer! Now I want crabs!! I guess I’ll just have to enjoy this salad until they are back in season! Luckily I have some in my lunch bag to enjoy today!
I knew I needed to work for most of the afternoon so I decided to rely on the crock pot for dinner. I checked out our nearly bare fridge, freezer, and pantry and set out on a cooking adventure. I kept my fingers crossed for an edible result!
I threw some onion, carrots, and celery into the crock pot along with broth (and flour), and chicken. I let it cook on low and then made dumplings, which I added near the end of the cooking time for a slow cooker chicken and dumplings!
Chris loved this dinner. I liked it, but I want to tweak it a little more before I share the recipe with you all!
After dinner we watched this week’s Walking Dead. I CANNOT wait for next week! I hope they resolve some things and don’t leave us hanging until the spring!
