Hello there! I hope you all had a nice weekend! I had a busy and productive weekend here in DC.
On Friday night, Chris wanted to take it easy so we heated up leftovers and I got to catch up on some TV shows I’m behind on like Scandal and Revenge! So good!
Butternut squash and black bean bowls were on the dinner menu. We had this the night before in taco form and had it over quinoa the next night. I usually make this with sweet potatoes and was excited to try it with roasted butternut squash. I’ll try to post the recipe here in the future! It is pretty easy and so delicious!
On Saturday morning, Chris needed to take care of some not-so-fun tasks like getting an oil change. I went for a run and did a little work while that was happening! A little while later we headed to the grocery store to stock up for the week. Chris has started to join me on my weekly shopping trip because he has started to take his lunch. It’s nice to go together! I was pretty hungry (not a good thing to be at the grocery store!) and picked up a bowl of Safeway’s chicken noodle soup. It was pretty good! I added a little hot sauce, which took it up a couple notches.
A little while later I got to work on these beauties. Pizza muffins!! The recipe will be up on the blog on Friday!!! Something to look forward to! 🙂 Chris was going to the Redskins game the next day, so I wanted to make something the boys could enjoy while they tailgated. The muffins got rave reviews!!! I must admit, it really was hard to wrap the muffins up instead of eating them!!!
But that was okay because I made another pizza for dinner! I bought an extra crust because I knew I would have leftover sauce. Chris said he didn’t mind having pizza two days in a row so I decided to go ahead and make it as an easy dinner. It was topped with light salami and mushrooms. YUM!
After dinner, Chris and I headed out to meet up with some of his work friends in Arlington. It was good to see them!
On Sunday morning, I helped Chris get out the door to the Redskins game and then I headed out for a 5 mile run. My run felt fantastic and got me thinking about possibly putting another half marathon on the calendar. I worry about getting the miles in with school work, but I feel like making time for something healthy like a long run wouldn’t really be a bad thing! It would probably help with stress too! We’ll see!
I was STARVING when I got back from my run and quickly whipped up a “brown” smoothie. This is basically a combo of my Green Smoothie with some blueberries and peaches thrown in instead of a banana. SOOO good!
After cleaning myself up, I headed out to run some errands. I also picked up lunch from Panera! I recently found out that there is a Panera in the Rosslyn metro mall – I found out when I went to get some links removed from a watch at a jewelry store in the mall. Who knew!! I can’t believe I’ve lived in Rosslyn for close to three years without this little nugget of knowledge. I love Panera and I have two giftcards that have been burning a hole in my pocket because I didn’t think one was close by! I ordered their Power Chicken Hummus bowl. It comes with spinach, tomato, cucumber, red onion, chicken, hummus, and a lemon wedge to sprinkle over top. Such a good lunch and really healthy!! I also had a glass of their Unsweeted Acai Berry tea – I love this as well and I feel really healthy drinking it because of all the benefits of acai berries!
After lunch, I did some homework and then got busy in the kitchen making dinner and lunches. I always feel better when I have all of my chores finished for the upcoming week!
Chris got home around 7:30 and I welcomed him with a warm bowl of my White Chicken Chili. He was sad when he saw that my menu board said White Chicken Chili the other week, but I had actually photographed the recipe last year! I promised I would make it again after teasing him! It was so yummy and the perfect way to end the weekend.
After dinner we caught this week’s Walking Dead. What did you all think?? I’m not sure what I think about Rick’s choice in how to deal with Karen.
