Hi everyone!! I hope you all had a wonderful weekend!! Chris and I had a much needed relaxing weekend. I was super tired all last week and wanted to reboot this weekend, and that is exactly what we did!
On Friday night, Chris and I both went for runs in the evening and had a late dinner.
The fridge was pretty bare, but I managed to whip up a quinoa salad with red onion, red peppers, spinach, and a can of tomatoes. I seasoned it with red wine vinegar and served it warm. It was delicious!
Chris and I decided to rent The Great Gatsby. I loved it!! I read the book last spring and have been wanting to see the movie since it was released. Chris didn’t think he would like it, but he ended up really enjoying it! I definitely recommend it. Plus — two and a half hours of Leo is never a bad thing!
On Saturday morning, I was up early — likely due to an early bedtime! I whipped up some whipped banana oats for breakfast. I LOVE this breakfast! It’s so filling and satisfying. I usually have greek yogurt for breakfast during the week, so it’s nice to switch things up on the weekend.
After breakfast, I headed out to the grocery store. I’m excited to share a new service with you all later this week, which made my grocery shopping so much easier! I got my list ready and clipped digital coupons on my Safeway app.
Sidenote — I’m addicted to digital coupon clipping on my Safeway app. Are there any other Safeway app addicts out there??
After I got back from the grocery store, I got some serious Crim Pro outlining out of the way. I got hungry while outlining, so I had a banana topped with natural peanut butter. I’m also addicted to drippy natural peanut butter. So much better than the regular peanut butter!
Around 5, Chris and I headed down to the gym for a workout. It felt good to move around after sitting in my desk chair for a majority of the day!
For dinner, I whipped up my first meal of the week from my Cook Smarts subscription! I have a whole post coming about Cook Smarts later this week — keep an eye out! Chris and I had chopped house Italian salads with a homemade vinaigrette as an appetizer.
The main even was an incredible pepper and mushroom pizza! I’ve never had mushrooms on pizza and now I’m officially addicted! I also made an easy and incredible homemade pizza sauce, which was basically the best pizza sauce ever. Seriously, I could have eaten it with a spoon!
After dinner, Chris and I headed into Georgetown and had a couple of drinks at Martin’s Tavern, which is where we had one of our first dates! We had a nice time just sitting at the bar chatting. It was a lovely way to get a change of scenery without breaking the bank!
On Sunday morning, I was up pretty early again and I was ravenous! I made a breakfast frittata with leftover mushrooms, a can of tomatoes, cheese, and four eggs. The mushrooms added a nice earthiness to the frittata. I also sprinkled the top with a little panko and parmesan right before it finished cooking. I loved the crunchy texture it added!
I did work for most of the day on Sunday too and set out to prep meals for the week around 5.
For dinner, I made a second Cook Smarts meal – a chicken and eggplant parmesan bake! Oh my GOSH this was awesome. First of all, I got to fulfill my dream of eating the previous night’s pizza sauce with a spoon, because you used the leftover sauce for the bake. Second of all, I got Chris to like eggplant!! Finally, this was so hearty and delicious that no pasta was needed!! A big plus because I’m try to eat fewer carbohydrates. We had this with a side of garlicky brocolinni. The brocolinni was a perfect addition to cut through the heavy chicken parm bake. I can not say enough good words about my Cook Smarts experience so far! I am excited for the rest of the week!
Chris and I cleaned up dinner and then sat down to enjoy the final episode of Breaking Bad!! What did you all think of the ending??!! I really liked it and am happy that nothing was left unresolved.
After Breaking Bad, I headed to bed to prepare for another busy week! I hope you all have a wonderful week and I’ll see you back here soon!
