Onion Baked Chicken

Hi everyone! Happy Friday! I don’t know about you all, but this week has seemed to last forever! Luckily, I was able to whip out a new and easy dinner recipe midweek to spice things up.  It’s super easy and really flavorful. The calorie count is pretty awesome too!

I don’t know about you all, but every once in awhile I get super tired of the same old chicken breasts. I sometimes use dry onion soup mix on potatoes and pot roast and I thought why not add it to bland old chicken? The result? Awesome!!!

Onion Baked Chicken

To make this recipe you need: 1.75 lbs boneless, skinless chicken breasts, 3/4 cup plain panko breadcrumbs, 1 (1 oz) packet  dry onion soup mix, and butter flavored cooking spray.

CIMG1531First, preheat the oven to 400 degrees. If you have large pieces of chicken, slice them into smaller pieces. I made about 4 small chicken cutlets per pound (3 lbs are pictured – I froze the extra cutlets!). You want each piece of chicken to be relatively the same size. If you don’t want to cut your chicken, than I would suggest pounding it so it isn’t quite as thick.

CIMG1532Combine the panko breadcrumbs and the dry onion mix.

CIMG1534Place plastic wrap over the breading mixture and mix while also breaking the pieces up slightly.

CIMG1536Spray the chicken on both sides with the butter spray and also coat a baking sheet. Bread the chicken in the onion mixture and place the breaded chicken on the baking sheet. Spray the tops of the breaded chicken with a little more cooking spray.

Repeat with the other pieces of chicken. I ended up with 8 small chicken breasts.

CIMG1538Place the chicken in the oven and cook for 10 minutes. Flip each piece and then cook for about 10 more minutes.

Can’t get much easier than that can it? This chicken is super flavorful and leftovers do not stick around long in this house! We had our with some roasted squash and red onion along with a side salad, but really and side would be great! Say hello to your new dinner staple!

Serves 4-6

1.75 lbs boneless, skinless chicken breasts
3/4 cup plain panko breadcrumbs
1 (1 oz) dry onion soup packet
Butter cooking spray

Preheat oven to 400 degrees.

Slice chicken into even sized pieces (or pound). Combine breadcrumbs and onion soup packet. Place plastic wrap over the breadcrumb mixture to combine and slightly break up the onion pieces.

Spray the chicken and a baking sheet with butter spray. Bread the chicken in the breadcrumb mixture and place the chicken the baking sheet. Spray the top of the chicken with more cooking spray. Repeat with the other pieces of chicken.

Place the baking sheet in the oven and cook for 10 minutes. Remove and flip each piece. Return the pan to the oven and bake for another 10 minutes.

Remove and serve!
