The Best Black Beans Ever

Hi everyone!! I hope you all have had a nice week! For those of you who are curious about how my argument on Monday went, Sarah and I successfully argued for the defense and won!!! High five!!!

So I know “The Best Black Beans Ever” is quite a cocky title, but seriously – this recipe makes THE BEST BLACK BEANS EVER!!! I have always loved black beans, in fact when I was younger I got made fun of for ordering black bean soup as an entrée at a Mexican restaurant. What can I say? They’re awesome!

I originally saw this recipe in my new favorite cookbook, It’s All Good, but I made a few changes. Mostly, I just reduced the amount of oil to bring down the overall fat content! Believe me, you don’t need a ton of fat to make these beans awesome – the trick is to cook them over low heat for at least fifteen minutes to get a deeper flavor.

Black Beans

To make these black beans you need: 1 29 ounce can of black beans, 8 sprigs of cilantro, 1 Tbsp. olive oil, 1 tsp. of minced garlic (2 cloves), and a sprinkle of sea salt.

CIMG1486Begin by heating 1 Tbsp. of olive oil over medium heat. Once the oil is hot, add 1 tsp. of minced garlic. Stir the garlic and cook until just fragrant. Careful, garlic can burn on you quickly!

CIMG1487Add the entire can of black beans to the pot. Sorry it’s really hard to photograph black beans!

CIMG1490Thoroughly clean the cilantro and pat dry. Add the 8 sprigs of cilantro to the pan and stir. Let the black beans come to a boil and then reduce heat to low. Allow black beans to simmer for 15 to 20 minutes, stirring occasionally. Remove the cilantro and discard.

CIMG1493 Serve with your favorite dinner as a hearty and satisfying side dish! This is great with my fish tacos, but is also a perfect accompaniment to chicken and other lean proteins!

Serves 4
Adapted from It’s All Good

1 29 oz can black beans
8 sprigs cilantro (thoroughly rinsed)
1 Tbsp. olive oil
1 tsp. minced garlic
Sprinkle of sea salt

Heat 1 Tbsp. of olive oil over medium heat. When the oil is hot, add 1 tsp. of garlic. Stir and cook until fragrant.

Add the entire can of black beans, cilantro, and salt. Stir and bring to a boil. When the beans are boiling, reduce the heat to low. Let the beans simmer for 15-20 minutes and stir occasionally.

Remove the cilantro and discard before serving.

Enjoy as a filling side dish to your favorite dinner!
