Hey guys!!! Happy Monday!! I hope you all had a nice weekend. We had a fun weekend here in DC.
On Friday night, Chris had his quarterly work happy hour. His company puts money towards a bar tab in Arlington for their employees, which is great for us because we can take a cheap cab home after having some drinks on them!
Chris golfed with some of his friends on Saturday and I spent a majority of the day working on a school assignment.
After finishing up for the day, I headed down to the gym to sneak in a workout before heading out to meet some friends. I had the gym to myself, so I could set the TV to whatever I wanted. Friends was on!!! Gym time goes by so much faster when you like what you’re watching. I tend to laugh out loud at Friends… good thing it was just me and the cardio machines!
Around 5, I headed into DC to have crabs with some friends!! The crabs were great and Lizzy made a fantastic pasta salad to go along with them. Thanks Lizzy and Reilly! Our picnic was a success, but we did get rained on shortly after! Just a quick summer rain though — which ended with a beautiful rainbow!!
On Sunday, Chris and I took it easy for most of the day and I worked on my assignment a little more. I made this delicious quinoa salad for lunch with red and green peppers, red onion, mozzarella cheese, kalamata olives, and fresh basil. Topped with some red wine vinegar. It was delicious!!
Around 4 or so Chris and I were hungry again so I whipped up some smoothies for us. I used this recipe for that gorgeous glass of purple, except I substituted a scoop of vanilla protein powder for the almonds and used skim cow’s milk instead of almond. I was a little worried because I don’t have a blender, but my food processor did a good job! Next time I’ll probably chop up the peaches a little bit to help it out though.
Chris and I were starving when we got back, so I made turkey tacos and roasted cauliflower after showering. They were just what the doctor ordered!
After dinner, Chris and I watched a couple of episodes of House of Cards. Chris and I are loving it as a new series and are happy to have something new to fill the series-less summer nights.
