Hi everyone!! I hope you’ve had a nice week! Mine has been busy, but great! Chris and I have been avid runners this week, which has really amped up my daily energy level – something I could get used to!
I have a super easy, quick, and delicious side recipe for you today!
Chris and I tend to eat the entire batch in one sitting, it’s that good!!
For this recipe you need: 1 cup of water, 1/2 cup of whole wheat couscous, 2 1/2 Tbsp. of lemon juice, 1 tsp. olive oil, 1 Tbsp. of reduced fat Parmesan cheese, 1/8 tsp. sea salt, 1/4 tsp. black pepper, and 1/4 tsp. garlic powder. Most of you probably have many of these items in your pantry already!
To start, bring one cup of water to boil.
When the water begins to boil, stir in the the couscous. Then, cover and remove from heat.
Let the couscous sit covered for about 5 minutes.
In the meantime, prepare the dressing. Combine the lemon juice, olive oil, salt, pepper, and garlic powder. Whisk to combine.
After 5 minutes, fluff the couscous with a fork. Pour the dressing on the couscous, add the 1 Tbsp. of Parmesan cheese, and stir to combine.
Serve it up and garnish with some parsley and extra cheese if desired!
