Lemon and Parmesan Whole Wheat Couscous

Hi everyone!! I hope you’ve had a nice week! Mine has been busy, but great! Chris and I have been avid runners this week, which has really amped up my daily energy level – something I could get used to!

I have a super easy, quick, and delicious side recipe for you today!

20130711-220219.jpgI’ve made this Lemon and Parmesan Whole Wheat Couscous a couple of times now because Chris and I love it. The flavor is really great without being too lemon-y or Parmesan-y.

Chris and I tend to eat the entire batch in one sitting, it’s that good!!

For this recipe you need: 1 cup of water, 1/2 cup of whole wheat couscous, 2 1/2 Tbsp. of lemon juice, 1 tsp. olive oil, 1 Tbsp. of reduced fat Parmesan cheese, 1/8 tsp. sea salt, 1/4 tsp. black pepper, and 1/4 tsp. garlic powder. Most of you probably have many of these items in your pantry already!

To start, bring one cup of water to boil.

When the water begins to boil, stir in the the couscous. Then, cover and remove from heat.

Let the couscous sit covered for about 5 minutes.

In the meantime, prepare the dressing. Combine the lemon juice, olive oil, salt, pepper, and garlic powder. Whisk to combine.

After 5 minutes, fluff the couscous with a fork. Pour the dressing on the couscous, add the 1 Tbsp. of Parmesan cheese, and stir to combine.

Serve it up and garnish with some parsley and extra cheese if desired!

1 cup water
1/2 cup whole wheat couscous
2 1/2 Tbsp. lemon juice
1 tsp. olive oil
1 Tbsp. reduced fat Parmesan cheese

Parmesan cheese and parsley to garnish

Begin by bringing the water to a boil. Stir the couscous into to the boiling water, cover, and remove from heat. Let this sit for 5 minutes.

To make the dressing combine the lemon juice, olive oil, salt, black pepper, and garlic powder. Whisk to combine.

Fluff the cooked couscous with a fork , pour in the dressing, and add the Parmesan cheese. Stir to combine.

Garnish with parsley and extra cheese if desired and serve!
