Lemon and Garlic Tilapia

Hi everyone, happy Friday! I have another new and easy dinner recipe for you today!

I decided it was high time to share a new fish recipe. Although my Blackened Tilapia is still a favorite, sometimes I like to keep things light and fresh with lemon. This recipe only takes about 5 minutes under the broiler and needs about 30 minutes to marinate prior to that. Just enough time to cook up some roasted veggies!

Lemon & Garlic TilapiaFor my Lemon & Garlic Tilapia you need: 2 tilapia filets, 1/2 cup lemon juice, 1 tsp. of minced garlic, sea salt, and pepper.

Begin by sprinkling both sides of the tilapia with sea salt and pepper.

Next, either place the tilapia in a glass baking dish or in a gallon sized bag. Pour 1/2 cup of lemon juice all over tilapia.

CIMG1270Top the tilapia with 1 tsp. of minced garlic – 1/2 tsp. on each piece! Allow the fish to marinate for 30 minutes and flip halfway through if you’re marinating in a baking dish. Be sure to keep the fish in the refrigerator while it marinates! Also, I like to put the garlic back on top of the fish after I flip it so it cooks down into the meat. You can do this or just wait until you flip to add the garlic – whatever works for you!

While the fish marinates, preheat your broiler. After 30 minutes, place the fish under the broiler for about 5 minutes or until the fish is flaky. No need to flip!

Serve with rice or whole wheat couscous to soak up the extra juice. We enjoyed ours with a side salad and Lemon and Parmesan Whole Wheat Couscous– recipe soon!

2 tilapia filets
1/2 cup lemon juice
1 tsp. minced garlic
Sea salt
Black pepper

Sprinkle the tilapia on both sides with sea salt and pepper. Place the fish in a gallon size bag or in a glass baking dish. Pour the lemon juice all over the fish. Top each fish filet with minced garlic (1/2 tsp. each). Allow to marinate for 30 minutes in the refrigerator and flip the fish halfway through if marinating in a baking dish.

Preheat the broiler.

Place the fish under the broiler and cook for about 5 minutes or until fish is flaky.

Serve and enjoy!
