Spicy Lemon and Garlic Shrimp

I have a simple and quick recipe for you all today! Easy dinners are the best, especially after a long hot summer day! I made this Spicy Lemon and Garlic Shrimp on a whim when I was feeling too lazy for an involved dinner, and it has become a fast favorite! I’ve made this twice using precooked shrimp, but you could use raw as well.

For my Spicy Lemon and Garlic Shrimp you need: 2 cups of frozen shelled shrimp (raw or cooked), the juice and zest of 1 lemon, 2 cloves of garlic (pressed or minced), 2 teaspoons of parsley flakes, and 1/2 teaspoon of crushed red pepper flakes. The first time I made this I put 1 teaspoon of olive oil in the pan before I cooked the shrimp, but the second time I left it out and had similar results. I don’t see a need to add extra fat when it’s not necessary!

To begin, zest one lemon.

Throw the zest into a bowl and squeeze in the juice. Make sure to remove any seeds.

Next, add 2 cloves of minced garlic and 1/2 teaspoon of crushed red pepper flakes.

Finally, add 2 teaspoons of parsley flakes.

Stir everything to combine and pour over the shrimp.

Let this marinate for about 15 minutes. Preheat a nonstick pan over medium-high heat. Add 1 teaspoon of oil if desired. Add the shrimp and marinade to the pan.

Cook shrimp for about 4 minutes– just long enough to heat through (or until they turn pink if starting with raw shrimp).

Remove from the heat and serve!

I like to serve this dish over brown rice, because rice absorbs the delicious the lemon sauce! You could substitute pasta, potatoes, or a salad for the rice, that’s your prerogative! I love having this recipe in my arsenal, it’s so easy and fresh with the best little kick!

Spicy Lemon and Garlic Shrimp
Serves 2

2 cups frozen shrimp (I used precooked & shelled)
Juice and zest of 1 lemon
2 cloves garlic, minced or pressed
2 tsp. dried parsley flakes
1/2 tsp. crushed red pepper flakes
1 tsp olive oil (optional)

Begin by zesting one lemon. Add the zest to a bowl, and then squeeze in the lemon juice. Be sure to remove any seeds. Throw in 2 cloves of minced garlic, the parsley flakes, and the red pepper flakes. Stir to combine.

Pour the marinade over the shrimp, and allow to sit for 15 minutes. Preheat a nonstick skillet over medium-high heat. Add oil if using. Pour the shrimp and marinade into the skillet. Cook for about 4 minutes, or until shrimp are warm throughout.

Serve over brown rice with extra sauce.

    Yumm that looks great! My boyfriend is allergic to shrimp so I can’t cook it very often 😦 but I bet this would work with chicken too! Or I could just wait until he’s not around and enjoy it all for myself! Haha
