Happy Monday everyone! I hope you all enjoyed your first “official” weekend of summer! It was hot and steamy in DC, but I still managed to spend some time in the sun, and eat some great grub! Friday night, I threw together a quinoa salad with garbanzo beans and leftover roasted veggies from earlier in the week. Dressed with a little olive oil and red wine vinegar, this was a light and quick dinner that I enjoyed before Chris and I met a few of his friends out in DC!
Saturday morning came early, and I whipped up breakfast with what was left in the fridge. Whole grain pancakes, an apple, turkey bacon, and eggs, scrambled for me and over easy for Chris. This kept me full until late in the afternoon!
I cranked out some laundry in the morning, and then headed down to the pool! The pool was empty in this picture, but filled up by the end of the afternoon. It was definitely hot, but not unbearable! I tried to keep cool, and went for another twenty-minute swim. The water wasn’t very refreshing though, due to the super hot week we had. Around 2, my roommate Steph brought me down a great pineapple, banana, and greek yogurt smoothie, which tided me over until dinner. It was so refreshing!
I had one of their pita sandwiches, the El Bandido, which has grilled chicken, bacon, red onion, red pepper, ranch dressing, horseradish, and Swiss cheese. It was a great sandwich, but super filling! I had to let Chris finish it off!
Chris and I also split some Italian Fries on the side. We headed back to my apartment after dinner, and watched “The Guardian” on DVD. It’s one of my favorite movies, and Chris enjoyed it as well. I was falling asleep by the end though, too much sun!
I slept late on Sunday, and decided to skip right to lunch. I made buffalo chicken bites, for us to split. I got the idea for the bites, after making Buffalo Chicken Pizza earlier in the week (recipe coming soon!!). Ranch on the side for dipping!
I also made a vegetable-heavy pasta salad. Whole wheat pasta, spinach, red onion, red pepper, and reduced fat cheddar cheese. Dressed with some olive oil, balsamic vinegar, and Italian seasoning. It was a great salad! I headed to the grocery store after lunch, to stock up on food for the week, and then headed home to do some blog cooking!
For dinner, I made Grilled Skirt Steaks with Olive Tapenade, which I’ll be posting a recipe for in the next week or two. It’s a great recipe, with a spicy, yet tangy marinade. We had roasted potatoes on the side, and tomatoes with shallots, dressed with a little olive oil, lemon juice, and parsley.
For dessert, we had White Chocolate Cheesecake Strawberries! I’ll be posting this recipe later this week, for those of you in need of 4th of July dessert ideas!! It was a wonderful weekend, and surprisingly productive! I hope you’re excited for my upcoming recipes, and that you had a fantastic weekend!
