I cannot believe the 4th of July is next week!! Seriously, where did June go? I’ve been trying to brainstorm a fun summery dessert to share with y’all, and came up with this gem! What better way to celebrate the 4th of July, than with patriotic strawberries with a cheesecake-y filling?! These are pretty simple to make, and so delicious!

Sometimes I make Chris eat meatless meals, and he will usually do so without too many complaints. Last week after he ate tofu with a smile (recipe coming soon!), I decided to make something I knew he would really enjoy. Frank’s Red Hot Sauce was my ingredient of choice, because he puts it on everything. Seriously, its like the commercial, he puts that “ish” on everything! I decided to take my favorite buffalo chicken dip, and turn it into a pizza! This pizza was not only super delicious, but really filling!! Definitely a keeper that will be made over and over again!
Happy Monday everyone! I hope you all enjoyed your first “official” weekend of summer! It was hot and steamy in DC, but I still managed to spend some time in the sun, and eat some great grub! Friday night, I threw together a quinoa salad with garbanzo beans and leftover roasted veggies from earlier in the week. Dressed with a little olive oil and red wine vinegar, this was a light and quick dinner that I enjoyed before Chris and I met a few of his friends out in DC!
I considered naming this dip, Heaven on Earth, because seriously, that’s what it is. You know when you see a recipe, and say to yourself, “Oh my goodness, I NEED to make that TONIGHT,” but then you never actually do? No?? Well, maybe it’s just me. Anyway, I see recipes all the time, and usually really want to make them, but just simply email them to myself, or pin them to make later. HOWEVER. I saw this recipe last Wednesday, while I was reading on my lunch break and NEEDED to have it, like right then. It was calling out to me! So, I did what any crazed, sweet tooth driven person would do, hit up the grocery store on my way home from work, and whipped this up before I could even change out of my work clothes. And, I am not sorry about it! Not one bit. This was wonderful, and it’s made with nonfat yogurt and fat-free cool whip, so it’s practically health food right? Anyone still with me?
Bourbon.glazed.pork. Pork that is moist on the inside, but has a caramely-boozey crust on the outside. Oh, and it can be on the table in about 20 minutes! Hellooo, what are you waiting for, make this now!
Happy Monday everyone!! We’re off to a gray and rainy start in DC, but at least we had glorious weather this past weekend! On Friday night, Chris and I wanted to take it easy, so we just headed to dinner at Piola, which is a fancy little pizza place a few blocks away from my apartment. We started off with the Peperonata Palmi, which reminded me a lot of my ratatouille! It’s basically a stew of sweet peppers, zucchini, onion, and tomato, but served with corn chips! It was definitely an interesting presentation that I never would have thought to do.
Chris and I eat chicken sausage pretty frequently, sometimes for breakfast, and sometimes as an easy dinner on hot dog rolls topped with mustard. Regardless of what time of day we’re having sausage, it is always paired with onions and peppers. Therefore, creating this Lightened Up Hot Italian Sausage and Pepper recipe was a no-brainer! This is an easy weeknight dinner, ready in an hour or less. It definitely packs a punch with the spicy sausage and crushed red pepper flakes, but the onion and green pepper balance out the heat, don’t worry!
