Happy Monday! I had a pretty low-key weekend, which is never a bad thing.
I made a frittata on Saturday morning with bell pepper, tomatoes, red onion, spinach, turkey bacon, and cheddar cheese. Have y’all ever made a frittata? They’re super easy, you just sauté whatever you want in an oven safe skillet on the stove top, and then pour in 4-5 beaten eggs. Top with cheese and broil for 4-6 minutes in the oven, and serve!

My roommate, Steph, was dog sitting all week, and stopped by to say hi on Saturday afternoon!

After watching the Kentucky Derby, Chris and I took it easy. We went to the Continental, which is near my apartment. We played skee-ball and Big Buck Hunter, and then continued the games later at my place on the Wii!
Sunday morning brunch came from the Brooklyn Bagel Bakery, which is in Courthouse, a short walk from Rosslyn. I had bacon, egg, and gouda, on a whole wheat everything bagel. Delicious!
