Happy Fourth of July!!!! What is everyone up to today?! Today, I want to share a super simple, but super delicious recipe. This recipe is for anyone who needs a last minute dish for tonight. In fact it is so simple, I made it twice in one weekend! Pimento Cheese is seriously addictive, which is why I wanted to make a lighter version of this typically mayo and cream cheese laden dip. Here’s how I accomplished that goal!
Gather your ingredients! You need: 1 8 oz block of reduced fat sharp cheddar cheese, 1 cup of extra sharp cheddar cheese, 1 jar of diced pimentos (drained), 1/4 cup & 3 tablespoons of fat free plain Greek yogurt, 3 tablespoons of light mayonnaise, 1/2 teaspoon of Worcestershire sauce, 1/4 teaspoon of garlic powder, 1/4 teaspoon of onion powder, and 1/4 teaspoon of cayenne pepper. (Sorry, I forgot to include the Worcestershire in my picture!)
The hardest part of this recipe is grating the cheese, which isn’t really that difficult. Please don’t skip this step and buy pre-grated; it tends to be too thin, and won’t yield as great of a result! With that said, the first step of this recipe is to grate the entire block of reduced fat sharp cheddar, and 1 cup of extra sharp cheddar! After that, add your grated cheese to a tupperware or mixing bowl.
Next, pour your pimentos in a fine strainer and drain the juice. Throw the pimentos in with the cheese!
Finally, add 1/4 cup and 3 tablespoons of Greek yogurt, 3 tablespoons of light mayonnaise, 1/2 teaspoon of Worcestershire sauce, 1/4 teaspoon of garlic powder, 1/4 teaspoon of onion powder, and 1/4 teaspoon of cayenne pepper.
Stir to make sure everything is mixed very well, and refrigerate until serving!
I served mine with crackers, but I think veggies would work as a healthy dipping alternative. This is too simple to not make, so do it!

3 Tbsp. light mayonnaise
1/2 tsp. Worcestershire sauce
1/4 tsp. garlic powder
1/4 tsp. onion powder
1/4 tsp. cayenne pepper
Begin by grating 1 8 oz block of reduced fat cheddar cheese and 1 cup of extra sharp cheddar cheese. Place the grated cheese in a mixing bowl or tupperware. Drain 1 4 oz jar of diced pimentos. Add the pimentos to the cheese. Combine Greek yogurt, mayonnaise, Worcestershire, garlic powder, onion powder, and cayenne pepper with the cheese and pimentos.
Stir well, making sure all of the ingredients are combined and mixed in. Refrigerate until serving.
