Happy Monday! This past weekend was full of delicious food! On Saturday afternoon I found myself at Crumbs Bake Shop in Arlington. This is only half of their cupcake selection!
I had half of a Peanut Butter Cup cupcake. It was very rich, and even had a peanut butter filling. Quite a treat!
Early Sunday afternoon Chris and I made our way over to Ray’s Hell Burger for lunch. I had a little devil with white cheddar, grilled onion, lettuce, tomato, pickles, and heck sauce (right side). Chris had the big devil (on the left) with pepper jack cheese, grilled onion, lettuce, tomato, pickles, and barbecue sauce. We split an order of onion fries. Ray’s really knows how to make a fantastic burger!! If you live in the DC area and haven’t visited, you’re missing out!
Sunday afternoon was spent catching up on some reading and lots of laundry! Fresh guacamole served as a mid-afternoon snack. I just threw in some red onion, cilantro, lime juice, salt, and pepper to compliment the creamy avocado.
Later in the evening, Chris and I got to work in the kitchen and made dinner together. We split this caprese salad as an appetizer, the grocery store was out of fresh basil, so dried had to substitute.
This beauty was in the oven while we ate our salad. We bought a refrigerated pizza crust, and I made tomato sauce from scratch in the food processor. Chris shredded the fresh mozzarella (part-skim!) and decorated the pie. Topped with fresh tomatoes and turkey bacon, plus lots of crushed red pepper! We’ll be making another pizza soon, such a fun dinner to make together. Maybe next time we’ll even make the dough from scratch!
In detox mode this Monday morning! I hope your week is off to a great start, and that you’re gearing up for a fun-filled Memorial Day Weekend!
